Fresh Hop Brewing
TommyKnocker Brewery - (Idaho Springs, Colorado)
Our Process is Pretty Simple
Get the fresh hops as fresh as possible. Ideally have them in the brew within 24 hours from the time they where picked. For our Fresh Hop Beer, which we have called "Bitter Brewer", it is a 15* plato IPA that rides on the green hop notes more then on the barley malt. We cram as many of the fresh hop cones in our hopback as we can. Dump the balance in the kettle right before we cool the wort down and transfer to the fermenter.
The Result.
A medium body, not too sweet, IPA with a big but pleasent green hop flavor on the tounge and big hop aromas on the nose.
